Ingredients

For the Cake Layers
  • 2.5 cups All-Purpose Flour Can substitute with gluten-free flour for a gluten-free version.
  • 1 cup Cocoa Powder Unsweetened cocoa is ideal; Dutch-processed can be used for a milder taste.
  • 1.5 cups Granulated Sugar Can substitute with coconut sugar for lower glycemic index.
  • 1 tablespoon Baking Powder Ensure it is fresh for optimal rise.
  • 1 teaspoon Salt No substitutions recommended.
  • 3 large Eggs Room temperature eggs integrate better.
  • 1 cup Milk Can be replaced with almond milk for a dairy-free option.
  • 2 teaspoons Vanilla Extract Use pure extract for the best results; imitation can be substituted.
  • 6 ounces Melted Chocolate Dark or semi-sweet chocolate can be used based on preference.
  • 1 cup Strawberry Puree Raspberries or other berries can be substituted for a different fruit profile.
For the Frosting
  • 8 ounces Cream Cheese A dairy-free cream cheese can be used for a non-dairy frosting.
  • 2 cups Powdered Sugar No substitutions recommended.

Equipment

  • Oven
  • Mixing Bowls
  • Whisk
  • Measuring Cups
  • 9-inch round cake pans

Method

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare three 9-inch round cake pans by greasing or lining them with parchment paper.
  2. In a large mixing bowl, whisk together all-purpose flour, cocoa powder, granulated sugar, baking powder, and salt for about 2 minutes until blended.
  3. In another bowl, whisk together eggs, milk, and vanilla extract until slightly frothy, then gently combine with the dry ingredients.
  4. Divide the batter into three equal parts, adding melted chocolate to one, strawberry puree to another, and leaving the last as vanilla.
  5. Pour the batters into the prepared pans and bake for 25-30 minutes, until a toothpick comes out clean.
  6. Once baked, cool the cakes in the pans for 10 minutes before transferring them to wire racks.
  7. Assemble the cake by layering chocolate, vanilla, and strawberry with cream cheese frosting in between each layer and covering the entire cake with frosting.
  8. Decorate with fresh strawberries, chocolate shavings, or a drizzle of chocolate sauce before serving.
