Marinating and Mixing
- In a bowl, combine olive oil, minced garlic, lemon juice, dried oregano, thyme, salt, and black pepper to create a marinade for the steak. Let it marinate for at least 30 minutes.
- Prepare the tzatziki by mixing Greek yogurt, grated cucumber, garlic, fresh herbs, lemon juice, salt, and pepper. Chill until ready to use.
- Whisk together the vinaigrette ingredients until well combined. Set aside.
Cooking and Assembling
- Preheat a skillet over medium-high heat. Sear the marinated steak for 4-5 minutes on each side until desired doneness. Let rest and then slice.
- Layer cooked grains in bowls, top with sliced steak, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta. Drizzle with vinaigrette and add tzatziki.
- Garnish with chopped parsley or dill and serve immediately.
