Ingredients

For the Base
  • 16 oz Strawberries Adds fresh fruit flavor and natural sweetness; consider using raspberries or blueberries for a lovely twist.
  • 1.5 cups Unsweetened Vanilla Almond Milk Provides a creamy texture with a hint of vanilla; feel free to swap in soy or regular dairy milk if preferred.
  • 5.3 oz Greek Yogurt Contributes a rich, creamy consistency and boosts protein content; substitute with dairy-free yogurt for a vegan option.
  • 0.5 cup Chia Seeds Acts as a thickening agent while providing a significant fiber boost; flaxseeds can be used as an alternative.
For Sweetness and Flavor
  • 5 tsp Maple Syrup Adds a gentle natural sweetness; honey or agave syrup works great as substitutes.
  • 1 tsp Vanilla Extract Elevates the overall flavor profile; always opt for pure vanilla extract for the best taste.

Method

Cooking Instructions
  1. In a blender, combine 16 ounces of sliced strawberries, 1½ cups of unsweetened vanilla almond milk, 5.3 ounces of Greek yogurt, and 1 teaspoon of vanilla extract. Blend on high until you achieve a smooth and creamy consistency, ensuring the strawberries are well-pureed and no lumps remain. This should take about 1-2 minutes.
  2. Once blended, pour the mixture into a large mixing bowl. Take ½ cup of chia seeds and sprinkle them evenly over the top of the blended mixture.
  3. Using a whisk, gently stir the blended mixture and chia seeds together until completely combined and smooth. This should take about 1-2 minutes.
  4. Taste the mixture and adjust sweetness with maple syrup as needed.
  5. Cover the mixing bowl with plastic wrap or transfer the mixture into individual serving jars. Place it in the refrigerator for at least 4 hours or overnight.
  6. When ready to serve, remove the pudding from the refrigerator, stir to ensure an even consistency, and garnish with extra strawberries or other toppings.
