- In a blender, combine 16 ounces of sliced strawberries, 1½ cups of unsweetened vanilla almond milk, 5.3 ounces of Greek yogurt, and 1 teaspoon of vanilla extract. Blend on high until you achieve a smooth and creamy consistency, ensuring the strawberries are well-pureed and no lumps remain. This should take about 1-2 minutes.
- Once blended, pour the mixture into a large mixing bowl. Take ½ cup of chia seeds and sprinkle them evenly over the top of the blended mixture.
- Using a whisk, gently stir the blended mixture and chia seeds together until completely combined and smooth. This should take about 1-2 minutes.
- Taste the mixture and adjust sweetness with maple syrup as needed.
- Cover the mixing bowl with plastic wrap or transfer the mixture into individual serving jars. Place it in the refrigerator for at least 4 hours or overnight.
