Step-by-Step Instructions
  1. Heat a drizzle of oil in a large skillet over medium-high heat. Add the boneless, skinless chicken breasts or thighs and sear them for about 5–7 minutes on each side.
  2. Remove the chicken from the skillet and set it aside. In the same skillet, add finely chopped onion and minced garlic. Sauté for about 3–5 minutes.
  3. Reduce the heat to medium. Stir in coconut milk, tomato paste, smoked paprika, chili flakes, lime juice, and chicken broth.
  4. Return the seared chicken to the skillet. Bring the mixture to a gentle simmer and cook uncovered for 10–15 minutes.
  5. Stir in freshly chopped cilantro and allow it to simmer for an additional minute before removing from heat.
