- Preheat your oven to 350°F (175°C). Lightly coat a 9x13-inch baking dish with cooking spray.
- Open one can of crescent roll dough and press it into the bottom of the prepared baking dish, pinching seams.
- Layer capicola, salami, and pepperoni across the dough. Add provolone and Colby Jack cheese, then top with pepperoncini.
- Open the second can of crescent roll dough and place it over the fillings, sealing seams together.
- Brush the top with olive oil and sprinkle with Parmesan cheese and Italian seasoning. Bake for about 35 minutes.
- Let cool for 15 minutes, cut into squares, and serve warm, at room temperature, or chilled.
