  • 1/2 cup low-sodium vegetable broth Used for deglazing
  • 1 can pinto or black beans Drained and rinsed
  • 1 cube vegan bouillon Omit if using broth
  • to taste various spices Customize with garlic powder, onion powder, paprika, cumin, smoked paprika, oregano, cayenne

  • 1 cup vegan Mexican queso salsa Creamy addition made from tomatoes, jalapeño, garlic, avocado, and salt

  • 10 small corn tortillas Fresh or warmed to avoid cracking

Method
 

Step-by-Step Instructions
  1. In a skillet, heat avocado oil over medium heat. Add finely diced onion and sea salt. Sauté for about 5 minutes until translucent.
  2. Mix in chopped tomato, diced celery, and jalapeño. Sprinkle in desired spices, cooking for an additional 3-5 minutes.
  3. Deglaze the skillet with vegetable broth, adding in the drained beans and bouillon cube. Let simmer for 20 minutes, mashing beans slightly.
  4. Bring a pot of water to boil with diced tomatoes, jalapeño, and garlic. Simmer for 10 minutes, then blend with half an avocado and salt.
  5. Warm tortillas in a skillet for about 30 seconds on each side until pliable.
  6. On a warmed tortilla, spread a layer of the bean filling and a spoonful of queso salsa. Roll tightly.
  7. Preheat air fryer to 390°F (200°C). Arrange taquitos in a single layer, lightly spray with avocado oil, and cook for 6-8 minutes.
  8. Serve warm with extra queso salsa, guacamole, or a side salad.
