- Bring a pot of water to boil with diced tomatoes, jalapeño, and garlic. Simmer for 10 minutes, then blend with half an avocado and salt.
- Warm tortillas in a skillet for about 30 seconds on each side until pliable.
- On a warmed tortilla, spread a layer of the bean filling and a spoonful of queso salsa. Roll tightly.
- Preheat air fryer to 390°F (200°C). Arrange taquitos in a single layer, lightly spray with avocado oil, and cook for 6-8 minutes.
