Cooking Steps
- Preheat your air fryer to 400°F (200°C). This usually takes about 5 minutes.
- In two separate bowls, whisk together the flour, cornstarch, and salt in one, and beat the eggs in the other.
- Cut the chicken into bite-sized pieces, coat in the flour mixture, then dip in the eggs, and back into the flour for a double coating.
- Grease the air fryer basket and arrange chicken in a single layer, spraying the tops with cooking spray.
- Cook the chicken for 10-12 minutes, flipping halfway through, until golden brown and cooked to an internal temperature of 165°F (74°C).
- While the chicken cooks, sauté minced garlic and ginger in a saucepan, then mix in the sauce ingredients and let simmer until thickened.
- Combine the cooked chicken and orange sauce in a large bowl, tossing to coat evenly.
- Serve over steamed rice or lo mein, garnished with green onions or sesame seeds.
