- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Layer several sheets of phyllo dough on a clean surface and brush each layer with olive oil.
- Cut the oiled phyllo sheets into 4x4 inch squares to wrap around the feta.
- Place a piece of feta cheese in the center of each phyllo square, fold and pinching the edges.
- Arrange the wrapped feta rolls on the baking sheet, brush tops with olive oil.
