- In a large mixing bowl, combine 3 cups of all-purpose flour, 1 teaspoon of baking powder, and 1 teaspoon of salt. Make a well in the center, then add 2 tablespoons of honey and 1⅓ cups of warm water. Mix until a shaggy dough forms. Turn it out onto a floured surface and knead for 10-12 minutes until the dough is smooth and elastic.
- Incorporate 2 tablespoons of sunflower oil into the dough, knead for an additional minute, shape the dough into a ball, and let it rest for 30 minutes.
- Heat 2 tablespoons of olive oil in a skillet over medium heat. Sauté 1 finely chopped yellow onion until translucent, add 1 pound of chopped chicken thighs, 1 tablespoon of ras el hanout, 1 teaspoon of turmeric, and a pinch of cayenne. Cook until the chicken is done, about 8-10 minutes. Allow to cool.
- Deflate the dough gently and divide it into 9 equal balls. Flatten each ball into a thick disk and let them rest for another 30 minutes.
- Stretch a disk of dough into a thin layer, add cheese and chicken filling, fold the edges over to seal in the filling.
- Heat more oil in a skillet, fry each filled Msmen for 4-5 minutes on each side until golden brown and crispy.
