- In a high-speed blender, combine 1 cup of cottage cheese, 1 cup of Greek yogurt, 1 cup of hulled strawberries, 1 cup of almond milk, 1 teaspoon of vanilla extract, and 2 tablespoons of sugar. Blend on high for 60 to 90 seconds until the mixture is velvety smooth and free of lumps.
- Pour the silky blended mixture into a large mason jar or serving container. Leave some room at the top for stirring in chia seeds later.
- Add 1/4 cup of chia seeds to the blended mixture. Stir vigorously for about 1 minute to ensure the chia seeds are evenly distributed.
- Cover the container tightly and place it in the refrigerator. Allow the pudding to chill for at least 24 hours.
- After chilling, remove the container from the refrigerator. Give the pudding a good stir, adding a splash of almond milk if needed. Spoon into bowls and top with diced fresh strawberries.
