Step-by-Step Instructions
  1. In a high-speed blender, combine 1 cup of cottage cheese, 1 cup of Greek yogurt, 1 cup of hulled strawberries, 1 cup of almond milk, 1 teaspoon of vanilla extract, and 2 tablespoons of sugar. Blend on high for 60 to 90 seconds until the mixture is velvety smooth and free of lumps.
  2. Pour the silky blended mixture into a large mason jar or serving container. Leave some room at the top for stirring in chia seeds later.
  3. Add 1/4 cup of chia seeds to the blended mixture. Stir vigorously for about 1 minute to ensure the chia seeds are evenly distributed.
  4. Cover the container tightly and place it in the refrigerator. Allow the pudding to chill for at least 24 hours.
  5. After chilling, remove the container from the refrigerator. Give the pudding a good stir, adding a splash of almond milk if needed. Spoon into bowls and top with diced fresh strawberries.
