- Begin by soaking the raw cashews or macadamia nuts in a bowl covered with water for 6 to 8 hours.
- In a high-speed blender, combine the soaked nuts with a roasted red bell pepper, water, nutritional yeast, salt, onion powder, ground turmeric, and optional ground nutmeg. Blend until completely smooth.
- While your sauce is blending, bring a large pot of salted water to a boil. Add your choice of pasta and cook according to package instructions until al dente.
- Transfer the blended sauce to a medium saucepan over low heat. Warm gently while stirring occasionally.
- After draining the pasta, immediately add it to the warmed sauce in the saucepan. Toss gently to ensure the pasta is fully coated.
