  • 8 oz Pasta such as penne, fettuccine, or spiralized zucchini

Step-by-Step Instructions
  1. Begin by soaking the raw cashews or macadamia nuts in a bowl covered with water for 6 to 8 hours.
  2. In a high-speed blender, combine the soaked nuts with a roasted red bell pepper, water, nutritional yeast, salt, onion powder, ground turmeric, and optional ground nutmeg. Blend until completely smooth.
  3. While your sauce is blending, bring a large pot of salted water to a boil. Add your choice of pasta and cook according to package instructions until al dente.
  4. Transfer the blended sauce to a medium saucepan over low heat. Warm gently while stirring occasionally.
  5. After draining the pasta, immediately add it to the warmed sauce in the saucepan. Toss gently to ensure the pasta is fully coated.
  6. Serve warm, garnished with fresh herbs if desired.
