Method
 

Step-by-Step Instructions
  1. Season the chicken with salt and pepper. Heat olive oil in a skillet and sear chicken for 6-7 minutes on each side until golden brown. Remove and keep warm.
  2. In the same skillet, melt butter and sauté minced garlic for 30-60 seconds until fragrant.
  3. Add flour to the skillet, stirring constantly for 1-2 minutes to form a roux.
  4. Slowly whisk in chicken broth and bring to a simmer, thickening for 5-7 minutes. Stir in heavy cream if desired.
  5. Boil peeled and chopped potatoes in salted water for 12-15 minutes until tender. Drain.
  6. Mash potatoes with butter and milk until smooth. Fold in cheddar cheese.
