  • 1 tsp Baking Powder
For the Cheese and Veggies
  • 1 cup Shredded Cheddar Cheese can substitute with other cheeses
  • 1 cup Chopped Spinach can use kale or Swiss chard
  • 1 medium Chopped Red Bell Pepper or diced zucchini
For Cooking
  • 2 tbsp Olive Oil can use avocado oil

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin with olive oil.
  2. In a large mixing bowl, whisk the eggs until frothy.
  3. Add cottage cheese to the eggs and mix until fully incorporated.
  4. Stir in the shredded cheddar cheese, chopped spinach, red bell pepper, garlic powder, salt, black pepper, and onion powder.
  5. Combine baking powder with a splash of water and stir into the egg mixture.
  6. Drizzle in olive oil and fold it into the mixture.
  7. Pour the egg mixture into the muffin tin, filling each cup about three-quarters full.
  8. Bake for 18 to 20 minutes, until the tops are golden and firm.
  9. Cool in the pan for 5 minutes before transferring to a cooling rack.
  10. Serve warm or store them in an airtight container.
