Ingredients
  

For the Cake
  • 1 cup Butter at room temperature
  • 1 cup Granulated Sugar
  • 1 cup Dark Brown Sugar light brown sugar can be substituted
  • 3 large Eggs room temperature
  • 2 cups All-Purpose Flour gluten-free flour can be tried but results may vary
  • 1/4 cup Cornstarch optional
  • 1 teaspoon Cardamom
  • 1 teaspoon Cinnamon
  • 1 teaspoon Ginger
  • 1/2 teaspoon Allspice
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 cup Sour Cream full-fat Greek yogurt works as a substitute
  • 1/2 cup Vegetable Oil melted coconut oil or butter can replace
  • 1 teaspoon Vanilla Extract no substitutes recommended
For the Frosting
  • 2 cups Powdered Sugar
  • 8 ounces Full-Fat Cream Cheese softened
  • 1/2 cup Brown Sugar dark or light based on preference
  • 1 tablespoon Vanilla Bean Paste or pure vanilla extract

Method
 

Preparation
  1. Preheat the oven to 170ºC (340ºF) and prepare two 8-inch baking pans with parchment paper and grease.
  2. Sift together flour, cornstarch, spices, baking powder, baking soda, and salt in a mixing bowl.
  3. Cream together butter, granulated sugar, and dark brown sugar until light and fluffy.
  4. Add eggs one at a time to the creamed mixture, mixing well after each addition.
  5. Gradually mix in half of the dry ingredients, then add sour cream, oil, and vanilla. Follow with the remaining dry ingredients.
  6. Pour batter into prepared pans and bake for 28-30 minutes until a toothpick comes out clean.
  7. Cool the cakes in the pans for 10 minutes, then remove and cool completely on a wire rack.
  8. Prepare frosting by beating butter, powdered sugar, and brown sugar until blended, then incorporate cream cheese and vanilla bean paste.
  9. Level the cooled cake layers and assemble with frosting in between and around the sides.
  10. Decorate as desired and serve with a warm beverage.
