Preparation Steps
- Start by slicing the large yellow onion into even rings. Heat 2 tablespoons of olive oil in a skillet over medium heat.
- Add the sliced onions along with a pinch of salt, and sauté gently for 25-30 minutes until caramelized.
- In a saucepan, pour in 3 tablespoons of olive oil over low heat. Add 1 sliced garlic clove and sauté for 2-3 minutes.
- Introduce 1 tablespoon of red chili flakes and 1 teaspoon of paprika. Cook for another minute, then add 1 teaspoon of soy sauce.
- Bring a large pot of salted water to a rolling boil. Cook your favorite pasta until al dente, reserving about 1 cup of pasta water before draining.
- In the skillet with caramelized onions, add the drained pasta. Drizzle with chili oil and toss gently.
- If the mixture seems dry, add reserved pasta water until achieving desired consistency.
- Plate the pasta and garnish with grated Parmesan cheese and fresh herbs.
