For the Chili Oil
  • 3 tbsp Olive Oil Extra virgin is recommended
  • 1 clove Garlic Sliced
  • 1 tbsp Red Chili Flakes Adjust to your heat preference
  • 1 tsp Paprika
  • 1 tsp Soy Sauce Swap with tamari for gluten-free
For the Pasta Base
  • 2 tbsp Olive Oil Extra virgin is recommended
  • 1 large Yellow Onion Sliced
  • 3 cloves Garlic Minced
  • Salt To taste
  • Pepper Fresh ground recommended
For the Finish
  • 1 cup Grated Parmesan Cheese Swap with nutritional yeast for vegan
  • Fresh Herbs Basil or parsley, for garnish

Method
 

Preparation Steps
  1. Start by slicing the large yellow onion into even rings. Heat 2 tablespoons of olive oil in a skillet over medium heat.
  2. Add the sliced onions along with a pinch of salt, and sauté gently for 25-30 minutes until caramelized.
  3. In a saucepan, pour in 3 tablespoons of olive oil over low heat. Add 1 sliced garlic clove and sauté for 2-3 minutes.
  4. Introduce 1 tablespoon of red chili flakes and 1 teaspoon of paprika. Cook for another minute, then add 1 teaspoon of soy sauce.
  5. Bring a large pot of salted water to a rolling boil. Cook your favorite pasta until al dente, reserving about 1 cup of pasta water before draining.
  6. In the skillet with caramelized onions, add the drained pasta. Drizzle with chili oil and toss gently.
  7. If the mixture seems dry, add reserved pasta water until achieving desired consistency.
  8. Plate the pasta and garnish with grated Parmesan cheese and fresh herbs.
