Step-by-Step Instructions
  1. Prepare the Blueberry Compote: In a small saucepan over medium heat, combine 1 cup of blueberries with 1 tablespoon of lemon juice and 1 tablespoon of honey. Simmer for 5-6 minutes until thickened. Allow to cool.
  2. Mix the Yogurt Base: In a bowl, combine 2 cups of Greek yogurt, 1 teaspoon of vanilla extract, and 1-2 tablespoons of honey or maple syrup. Blend until smooth and creamy.
  3. Fill Molds: Spoon about 1 tablespoon of yogurt mixture into each cavity of the mold, leaving space at the top for expansion.
  4. Add Blueberry Swirl: Gently place about ½ teaspoon of cooled blueberry compote on each yogurt cavity. Use a toothpick to swirl gently into the yogurt.
  5. Freeze: Transfer to the freezer and freeze for at least 2 hours or until firm.
