  • 1 cup rolled oats Quick oats can be substituted.
  • 1 large egg Flax egg can be used for a vegan option.
  • 1/4 cup honey or maple syrup Agave syrup or brown sugar are great alternatives.
  • 1 teaspoon vanilla extract Can be omitted if desired.
  • 1 each lemon zest Use fresh lemon juice cautiously.
  • 1 teaspoon baking powder Baking soda can be used as a substitute.
For the Mix-Ins
  • 1 cup blueberries Fresh or frozen can be used.
  • optional nuts or seeds Chia seeds or walnuts add texture.

Method
 

Directions
  1. Preheat the oven to 350°F (175°C) and grease a 24-cup mini muffin pan.
  2. Blend 1 cup of cottage cheese, 1 cup of rolled oats, 1 large egg, 1/4 cup of honey, 1 teaspoon of vanilla extract, the zest of one lemon, 1 teaspoon of baking powder, and a pinch of salt until smooth.
  3. Fold in 1 cup of fresh blueberries gently to maintain whole blueberries.
  4. Let the batter rest for 5 minutes.
  5. Fill each muffin cup about 3/4 full with the batter.
  6. Bake for 18-22 minutes until golden on top.
  7. Cool for 5 minutes before transferring to a wire rack.
