- Blend 1 cup of cottage cheese, 1 cup of rolled oats, 1 large egg, 1/4 cup of honey, 1 teaspoon of vanilla extract, the zest of one lemon, 1 teaspoon of baking powder, and a pinch of salt until smooth.
- Fold in 1 cup of fresh blueberries gently to maintain whole blueberries.
- Let the batter rest for 5 minutes.
- Fill each muffin cup about 3/4 full with the batter.
- Bake for 18-22 minutes until golden on top.
- Cool for 5 minutes before transferring to a wire rack.
