Preparation
- Preheat your oven to 350°F (175°C) and grease a 9-inch cake pan.
- In a saucepan, melt 1/2 cup brown sugar and 1/4 cup butter over medium heat until syrupy.
- Pour the mixture into the prepared pan and layer with blueberries.
- Beat 3 egg whites until stiff peaks form and set aside.
- Cream together 1/2 cup butter and 1 cup sugar until fluffy, then add 3 egg yolks and 1 teaspoon vanilla.
- Whisk together 1 1/2 cups flour, 2 teaspoons baking powder, and 1/2 teaspoon salt; alternate adding this mixture with 1/2 cup milk to the butter mix.
- Fold in the beaten egg whites gently until combined.
- Pour the batter over the blueberries and bake for 55-60 minutes, or until a toothpick comes out clean.
- Allow to cool for 15 minutes before inverting onto a serving plate.
