Step-by-Step Instructions
  1. Begin by cutting the chicken breast into uniform 1-inch cubes and patting them dry. Toss the chicken with olive oil, garlic powder, paprika, salt, and pepper, ensuring each piece is well-coated. Allow to marinate for about 10 minutes.
  2. Soak wooden skewers in water for 30 minutes or prepare metal skewers. Thread 4-5 pieces of marinated chicken onto each skewer, leaving space for heat circulation.
  3. In a medium bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar until smooth. Set aside some sauce for serving.
  4. For grilling, preheat to 400°F and grill skewers for about 5-6 minutes per side until internal temperature hits 165°F. If baking, preheat oven to 425°F and bake for 10-12 minutes, turning halfway. For pan-frying, heat oil in a skillet and cook for 8-10 minutes, turning until golden-brown.
  5. Remove skewers from heat and brush with reserved sauce. Garnish with chopped green onions, sesame seeds, and fresh cilantro. Serve hot with lime wedges and remaining sauce for dipping.
