  • 1 pound Fresh Salmon or canned salmon, drained
  • 1 cup Breadcrumbs panko recommended
  • 1/2 cup Parmesan Cheese or Pecorino Romano
  • 1 large Egg for vegan option use a flax egg
  • 1/4 cup Parsley fresh, chopped
  • 2 cloves Minced Garlic or garlic powder
  • 2 tablespoons Lemon Juice or lime juice
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Creamy Avocado Sauce
  • 1 large Ripe Avocado make sure it's perfectly ripe
  • 1/2 cup Greek Yogurt or sour cream
  • 2 tablespoons Lime Juice or lemon juice
  • 1 clove Garlic fresh or powdered

Method
 

Cooking Steps
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine chopped salmon, breadcrumbs, Parmesan cheese, beaten egg, parsley, minced garlic, lemon juice, salt, and pepper. Mix gently.
  3. Form the mixture into golf ball-sized meatballs and place them evenly on the baking sheet.
  4. Bake for 15-18 minutes or until firm and golden.
  5. Blend ripe avocado, Greek yogurt, lime juice, and garlic until smooth. Add water if needed for desired consistency.
  6. Serve the meatballs warm with a drizzle of avocado sauce.
