Method
 

Preparation
  1. Preheat your oven to 180°C (350°F). Gather ingredients and equipment.
  2. Season the cod fillets with salt and pepper on both sides, set aside.

  4. Add minced garlic and grated ginger, cook for an additional minute.
  5. Pour in coconut milk, lemon juice, and lemon zest. Simmer on low for 5-7 minutes.
  6. Place the seasoned cod in a baking dish, pour the sauce over.
  7. Bake in the oven for 20-25 minutes until cod flakes easily.
