Preparation
- Preheat your oven to 180°C (350°F). Gather ingredients and equipment.
- Season the cod fillets with salt and pepper on both sides, set aside.
- In a skillet, heat olive oil. Sauté onion until translucent, about 3-4 minutes.
- Add minced garlic and grated ginger, cook for an additional minute.
- Pour in coconut milk, lemon juice, and lemon zest. Simmer on low for 5-7 minutes.
- Place the seasoned cod in a baking dish, pour the sauce over.
- Bake in the oven for 20-25 minutes until cod flakes easily.
